Best friends!!!



Let me please express my excitement concerning the return of my best friend, and soulmate, Lacy Joy Gibb. She is returning from a 1.5 year absence in which she completed an honorable mission for the LDS church in Poland. I love this girl so much and it is FANTASTIC having her back.

Latest Project..



I used to be an avid scrapbooker, but living the poor college life left me with no scrapbook pages after freshman year! I decided to start with just Trevor and my "story" and worry about the rest later. I liked the first page I did so much, I decided to frame it an hang it in our house when the time comes!

This pictures isn't so great (My camera is still broken after I got sand it at the proposal!), but you get the idea!

A trip to Parma...


Parma is quickly becoming my other home. Who wouldn't love the smell of cows in the morning or the aroma of sulfur enriched water as you attempt to cleanse yourself in the shower? No really, I love the small town and it's close vicinity to Boise. I was able to spend a full week with Trevor and his family. I treasure those moments because it seems life just moves too fast.

We spent a day up in Riggins, Idaho rafting the Salmon River with one of Trev's old mission comps, and sisters. I had to admit, it was a bit scary at first, but SO fun. The rest of the week was spent shopping with the girls (I lasted a complete 2 hours and was pretty proud), and of course, the infamous Idaho State Fair in which the Roche show steers made their appearance. I have learned that though the fair is fun, I must bring a good book and a cold diet coke. Trevor even deemed the pink chair, my "princess chair." We really had a wonderful time.

Trevor and I had an interesting conversation about marriage. I do not, by any means, take the decision we are making to spend eternity together lightly. My sister in law, Kali Ponder, taught me something that really stuck with me. I have to be willing to give everything, even my stubborn independence, to my husband. This means trusting him completely to make decisions for not only my life, but my childrens' as well. This means trusting that he will lead our family in a way Heavenly Father would approve of. This means my COMPLETE faith and support. It was somewhat overwhelming, but my sweet fiance, assured my "fears." It is truly a wonderful blessing to know the man you will be with for eternity is a worthy, stalwart Priesthood leader. I have dated my share of jerks and liars, but what I have with Trevor is so real. I LOVE THAT!

HELP!

Okay everyone.... well, we had planned to have the wedding in SLC, but now Trev is SET on Nauvoo. I already had everything figured out for SLC so I'm a little stressed. I always had it pictured with all my friends (who ARE my family) there and all Trev's relatives, but Trev wants it to be more intimate. AHHH.... the problem with Nauvoo is simply there is NOTHING there. MY stylist is in Utah. We'd have to fly our photographer and videographer and then get them a rental car. The only florist in town is G-H-E-T-T-O. Oh ya, and we'd have to drive 10 hours that day.... I've never seen Trev so set on something and I want him to be happy. I don't mind Nauvoo but dont want everything to get so stressful.....If anyone knows anything about Nauvoo or having weddings there, please offer some ideas.

New Recipe! Chili Roast Cashews!

I am on a quest to lose 10 lbs. Call it "LGN" or whatever you will...I love almonds so I tried this recipe with almonds instead of cashews. It's a great snack!

1 egg white
1 TB water
1 lb (3 1/2 cups) almonds/cashews
1/3 cup sugar
1 TB mild chili powder
2 t ground cumin
2 t kosher salt
1/2 t cayenne pepper

1. Preheat oven to 250 degrees
2. In a medium bowl, whisk egg white with water till foamy. Add nuts and toss to coat. Transfer the nuts to a strainer, shake and let drain for at least 2 min.
3. in a large bowl, mix together sugar, chili powder, cumin, salt and cayenne. Add the nuts and toss to coat thoroughly.
4. Spread nuts on baking sheet. Bake for 4o min. Stir the nuts with a spatula, then spread out again and bake for another 20-30 minuts or until dry.
5. Loosen nuts but do not remove from sheet. Cool.

Our Engagment Photos!




Trev and I took the infamous engagements tonight! We are SO excited to see how they turned out. Our photographer is FANTASTIC. See his work at http://www.digitalizatt.com/. We were nervous b/c neither of us likes taking pictures. I have to call a few of my best friends to figure out what to wear and how to do my makeup! Well, our pictures turned out FANTASTIC and Dustin (the photographer) asked if he could use them on his site AND asked me if I would let him do my bridals for free so he could use them to advertise! awesome huh!?


We received another great blessing today! My "other" parents, the Fieldsteds, offered for me to live with them in thier home in Orem, rent-free, untill the wedding. I absolutely adore them, and once again, they come to the rescue. Trev and I were sort of worried about me working part time on top of teaching in order to pay rent and other stuff. Now, I won't have to! I'm sad not to be living with my best friends - but this is just an ideal situation!


Trevor left tonight for Rexburg. Tomorrow he is registering for his new, awesome, animal science classes and finding housing for Sept-Nov. Then, he's driving home to Parma to help out his dad on the ranch for the next month. It will be hard to be in different states, but I know we'll both be SO busy AND see each other a lot!


My last day of nannying is Wed. and I'm relieved. Nannying is good birth control. Today, Kemper threw a fit in the middle of Target. We are talking, SCREAMING at the top of his lungs, hitting, kicking, and on the floor type of fit. I thank Heavenly Father daily for these wonderful lessons of patience. High school students will be a welcome sight! I am leaving WEd. night for ALASKA!!!!!!!!!!! yea for Ryan and Kali's wedding. When i get back to Utah on Sunday, I am immediately driving up to Parma for some river rafting with my cute fiance! Fun times!!!!!
